Une récompense qui consacre un parcours atypique pour ce Libanais, débarqué à Paris avec 200 francs en poche il y a près de 20 ans. C’est un autodidacte dans le monde culinaire qui obtient une première étoile  Michelin pour la qualité de ce qu’il propose

Né au Libéria, le jeune homme a vécu au Liban avant de débarquer à 20 ans, sans formation, sans diplôme  et sans un sou en poche “200 frs précisément”, sur la terre de France. Il fait une cuisine française dont il rêvait toute sa vie, une “cuisine d’amour”. Son capital d’idées s’inspirait d’un autre amour, celui du Liban et le mariage culinaire affectif Franco-Libanais des goûts contribue à lui faire gravir des étapes et à créer des entremets honorés par Le guide Michelin. Le restaurant porte le nom de son chef Alan Geaam et est situé au 19, rue Lauriston, 75016 Paris.

Quels sont les critères de sélection du guide Michelin pour attribuer les étoiles à certains restaurants plutôt que d’autres?

Les inspecteurs mystérieux de Michelin se basent sur  5 critères d’évaluation :

  • la qualité des produits,
  • la maîtrise des cuissons,
  • la créativité,
  • le rapport qualité-prix et
  • la régularité.

Les touches d’exotisme apportées par le chef Alan Geaam à ses plats français s’inspirent de sa région d’origine Beddaoui – Tripoli. C’est un clin d’oeil structuré et sincère au Liban en parcourant ses menus. Certains produits libanais sont introduits tels que la mélasse et du jus de grenade, le zaatar (thym libanais), le sumac et d’autres épices méditerranéennes.

A reward that devotes an unusual career path for this Lebanese, arrived in Paris with 200 francs in pocket almost 20 years ago. He is an autodidact in the culinary world who gets a first Michelin star for the quality of what he proposes.

Born in Liberia, the young man lived in Lebanon before landing at age 20, without training, without diploma and a penny in his pocket “200 francs precisely”, on the land of France. He makes French cuisine that he dreamed all his life, a “kitchen of love”. Its capital of ideas was inspired by another love, that of Lebanon.The culinary emotional Franco-Lebanese wedding tastes contributes to make him climb steps and to create entremets honored by The Michelin guide. The restaurant is named after its chef Alan Geaam and is located at 19, Lauriston Kills, 75008 Paris.

Chef Alain Geaam’s exotic touches to his French dishes are inspired by his home region Beddaoui – Tripoli. It is a structured and sincere wink to Lebanon by browsing its menus. Some Lebanese products are introduced such as molasses and pomegranate juice, zaatar (Lebanese thyme), sumac and other Mediterranean spices.
